When I get into the mood for baking, I have a great big lemon tree in my garden and when the fruit is ripe I make a beautiful lemon cake.  I used to bake more but since I have found it difficult to tolerate wheat and gluten products I have been looking for alternatives that I can substitute for flour – plain and self raising.  I have used a combination of Rice flour and ordinary white SR flour but found it still irritated me.  I am going to make one with Buck wheat flour and see how that will turn out.  I do miss baking and making pies and cakes.  So when I have found a solution to the texture and flavour of the mixes then I shall once again get back into the kitchen and make a cake or two for myself.
